		<description>I usually use a screw top lid. I just happened to use that rubber one because that is what I had on hand. I&#039;ve also used just plastic wrap too. If I wasn&#039;t going to refrigerate my fermented item after a few days of culturing on the counter, I would be more worried about a perfect seal. But after several years of making it, I&#039;ve never had a bad batch with just using screw top lids.</description>

Jono&#039;s super excited about the garlic and the cayenne so I&#039;ll have to start with this and I&#039;m going to make it right after Shabbat :)Do I have to use whey or can I just use water?</description>
