When making stock with bones, would it matter if the animals were organic/grass fed/range free? I would think that if the animal is given hormones, etc., that the “bad” stuff would even be in it’s bones… is that true? I don’t know how I would have access to bones that come from healthy animals…

  • Yes, you are so right! DO NOT use bones from feed lot cows or confined chickens. The interesting thing about the toxins in our food is that they build up more in animal products (particularly their fat) than they do in plant based foods. I have cheated a few times and did not use good quality bones but it really isn’t wise to do so. Thankfully, bones are the cheapest of all meat products and SO healthy. In fact, if I was unable to afford quality meat I would probably refuse to eat commercial meat and only spend my few shillings on really good quality meat bones. If you think about the poor from centuries ago, they consumed soups daily made from stock, with a hearty homemade bread. I’ve read that one cup of stock from grass fed/free range animals is equal to the amount of minerals you need on a daily basis.

It is hard to find quality meat bones, but depending on how much you can spend you can find them online at: http://www.grasslandbeef.com/StoreFront.bok

Also, do you know any hunters or fishermen? Ask your local grocer to carry what you are looking for, they are usually very eager to provide what you need. Do you have a local butcher? Sometimes they carry grass-fed meat bones.
